No Bake Energy Bites

Treat yourself or your children to this heart healthy tasty treat, and best of all its easy to put together! A great addition to a packed lunch or mid-morning snack!

1 cup old fashioned oatmeal
1/2 cup natural peanut butter
1 cup toasted coconut flakes
1/3 cup honey
1/4 cup dark chocolate chips
1/4 cup ground flax seeds
1/4 cup dried berries (of choice)
1/4 cup chia seeds
1 tsp. vanilla

Stir all ingredients together in large bowl, thoroughly mix. Let chill in refrigerator for 1/2 hour. Roll into 1-inch balls (or use cookie scoop) to drop into mini baking cups or wax paper. Makes 20-30. Variations: Try other nut butters instead of peanut butter. Leave out chocolate chips & double the berries, & partially dip finished balls in dark melting chocolate
